It becomes crunchy and makes a crust once it is baked in the hot greased cast iron frying pan.<br /><br />Then I fill " the crust " with veggies, onions, some beaten eggs, whatever diced cooked meat I have or some ground meat already cooked, season to taste, cover with grated cheese, cheddar is our favourite but use what you have.<br /><br />Once the frying pans are hot, coat them lightly with an oil/grease - put in the potato/rice/noodle crust layer, then the veggie/meat/egg layer, top with cheese and bake for about 30 minutes at 350F or<br />until top is brown.
